Ingredients required to prepare this item are 1cup of maize flour (makai ka atta), ¼ cup chopped spinach, 1 spoon chopped green chillies for dough and ½ cup grated panner, ¼ cup boiled and mashed green peas, ¼ cup chopped coriander (dhania) along with salt, water and oil as required. Ingredients like wheat flour (for rolling) and butter (for serving) also required.

Mix all the ingredients of dough together in a bowl by pouring enough water. Make it soft and keep a side for 10 minutes. Mix oil and divide the soft dough into 4-5 equal parts and make round balls. Roll out each ball into 100mm using the wheat flour if required. Divide the stuffing equal to number of rolled ones and keep aside. Place the dough circle on a clean and dry surface and put the dived stuffing at the centre of that circle. Fold the edges of the circle by keeping the stuffing inside and it will look like a square. Press the edges softly so the stuffing won’t spill. Roll it once again to 125mm using wheat flour. Heat the Griddle (tavva) and cook the paratha with enough oil. Make sure two sides of the paratha is properly cooked.  Repeat the procedure for the remaining ones also and serve it with butter. Now your favourite stuffed makai palak paratha is ready to eat.

One must follow some tips while making these special parathas. One can use chopped green leafy vegetables like shredded cabbage, fenugreek leaves etc. instead of spinach and try variety of dishes. One can also choose tofu and mint instead of panner for stuffing. Try these variations also and you will love it. Prefer stuffed parathas rather than normal ones as eating same normal parathas daily will be bore.
